A quick, cold soup, brought to you by one of our early adopters - Garima Pugalia. (Instagram @happieherbivore) Made with tomatoes, cucumbers and a flavour boost from basil and celery, this makes for an ideal week night dinner.

Ingredients

  • 2 tbsp Pomace Olive Oil
  • 1 piece Celery (cutTwo)
  • 1 piece Red Bell Pepper (deSeed)
  • 5 leaves Basil (wash)
  • 1 tsp Salt
  • 1 piece Green Chilli (remove)
  • 1 clove Garlic (peel)
  • 0.5 piece Onion (handChop)
  • 1 piece English Cucumber (handChop)
  • 0.25 tsp Black Pepper (ground)
  • 2 stems Tomato (remove )
  • 0.5 piece Onion (handChop)
  • 0.5 piece English Cucumber (handChop)
  • 0.5 piece Red Bell Pepper (handChop)

Instructions

Add vegetables and oil to jar

Add Celery, Red Bell Pepper, Garlic, and Onion to The Upliance 2.0 jar. Add 2 tbsp of Pomace Olive Oil. The device will now sauté at 95°C for 3 minutes with automatic stirring.

The device will now cut and blend

Add Tomatoes, Basil, Green Chilli, and remaining vegetables to The Upliance 2.0 jar. Select blend mode. The Upliance 2.0 will blend at speeds 2-12 for a total of 30 seconds, increasing speed gradually.

Add Seasoning and Refrigerate

Add Salt and Black pepper to The Upliance 2.0 jar. The device will automatically mix. Transfer the soup to a bowl and refrigerate for at least 2 hours.

Garnish and Serve

Garnish with chopped cucumber, tomato, and onion. The dish is ready.
