Masala Toast
Ingredients
- 4 slices thick bread (white or whole wheat)
- 2 tbsp butter, softened
- 3 tbsp green chutney (coriander-mint)
- 1 medium potato, boiled and sliced
- ½ small onion, thinly sliced
- ½ medium tomato, deseeded and sliced
- ¼ small capsicum, thinly sliced
- ½ tsp chaat masala
- ¼ tsp cumin powder
- ¼ tsp red chilli powder
- Salt to taste
- Cheese slices (optional)

Prepare the filling
Season the sliced potato, onion, tomato, and capsicum with chaat masala, cumin, red chilli powder, and salt. Toss gently.

Butter the bread
Butter one side of each bread slice. The buttered side goes against the griller plates.

Apply chutney and fill
Spread green chutney generously on the unbuttered sides. Layer potato slices, onion, tomato, and capsicum on two of the slices. Add cheese if using. Top with the remaining slices, buttered side facing out.

Grill
Place in the preheated sandwich griller. Close and cook for 5–6 minutes until deeply golden on both sides.

Serve
Cut diagonally and serve immediately with extra green chutney and tomato ketchup. Sprinkle extra chaat masala on top.
Tips for Best Results
💡 Thick bread holds up better
Thin sandwich bread compresses too much under the griller press. Use 1.5 cm thick slices — the kind sold as "toast bread" or cut from a loaf yourself.
💡 Drain wet vegetables
Tomato and onion release water under heat. Pat them dry before assembling to prevent soggy toast.
💡 Generous chutney is key
The green chutney is what makes masala toast distinct from a regular veggie sandwich. Use a thick, generous layer — it should be visible in every bite.
