Roasted Vegetables
Ingredients
- 200g broccoli florets
- 1 medium zucchini, sliced
- 1 medium carrot, sliced diagonally
- 1 capsicum, cut into chunks
- 10–12 cherry tomatoes
- 2 tbsp olive oil or any cooking oil
- 1 tsp garlic powder
- 1 tsp mixed herbs or Italian seasoning
- ½ tsp red chilli flakes
- Salt and black pepper to taste
- Lemon juice to finish

Prepare the vegetables
Wash and cut all vegetables to roughly the same size so they cook at the same rate. Pat them dry — moisture prevents caramelisation.

Season
In a large bowl, toss all vegetables with oil, garlic powder, herbs, chilli flakes, salt, and pepper. Every piece should be lightly coated.

Preheat air fryer
Preheat air fryer to 190 °C for 3 minutes.

Air fry
Spread vegetables in a single layer in the air fryer basket. Do not pile them up. Air fry at 190 °C for 12–15 minutes, shaking the basket once halfway through.

Check and serve
Vegetables are done when the edges are slightly charred and they are tender when pierced with a fork. Squeeze lemon juice over and serve.
Tips for Best Results
💡 Cut to the same size
Uneven pieces cook unevenly. Smaller pieces will burn before larger ones are done. Take 2 minutes to cut them uniformly.
💡 Do not overcrowd
This is the most common mistake. Overcrowding causes steaming instead of roasting. Cook in batches if necessary.
💡 Dense vegetables need more time
Carrots and potatoes take longer than soft vegetables like zucchini or capsicum. Start dense vegetables first, then add softer ones.
💡 Finish with acid
A squeeze of lemon juice or a drizzle of balsamic vinegar brightens the flavour of roasted vegetables significantly.

Better Vegetables Without Gas
