Samosa
Ingredients
- 2 cups all-purpose flour (maida)
- ¼ cup oil or ghee
- ½ tsp ajwain (carom seeds)
- ½ tsp salt
- Cold water as needed
- 3 medium potatoes, boiled and mashed
- ½ cup green peas
- 1 tsp cumin seeds
- 1 tsp ginger, finely grated
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ tsp amchur (dry mango powder)
- ½ tsp red chilli powder
- Salt to taste
- 2 tbsp fresh coriander, chopped
- Oil spray for the air fryer

Make the pastry dough
Mix flour, salt, ajwain, and oil together, rubbing until the mixture resembles breadcrumbs. Add cold water gradually, kneading into a firm, non-sticky dough. Cover and rest for 30 minutes.

Cook the filling
The filling needs to be cooked in advance. Heat a pan (this can be done on an induction cooktop or any electric heat source), add cumin seeds, ginger, and peas. Cook for 2 minutes, then add mashed potato and all spices. Mix well, add coriander, and cool completely.

Shape the samosas
Divide dough into balls. Roll each into an oval, cut in half. Form a cone from each half, fill with the potato mixture, and press the edges firmly to seal. Crimp the sealed edge.

Preheat air fryer
Preheat air fryer to 180 °C for 5 minutes.

Air fry
Lightly spray or brush the samosas with oil. Place in a single layer in the basket. Air fry at 180 °C for 18–20 minutes, turning halfway through, until golden brown and crispy.

Serve hot
Serve immediately with green chutney or tamarind chutney.
Tips for Best Results
💡 Brush with oil, do not spray alone
A light brush of oil on the surface ensures even browning. Spray alone may leave dry spots.
💡 Seal the edges properly
Press the dough edges firmly and crimp with a fork. Any gap will open during air frying and the filling will spill.
💡 Use cold filling
Hot filling creates steam inside the samosa, which softens the pastry. Let the filling cool completely before filling.

Can You Really Make Crispy Samosas Without Gas?
Samosas are synonymous with deep frying — large woks of bubbling oil on a gas stove. The thought of making them in an air fryer sounds like a compromise. It is not.
Air-fried samosas come out genuinely crispy. The pastry blisters and browns, the filling stays moist, and you get the satisfying crunch without a drop of hot oil or a gas flame.
